Teaching KIDS to make PASTA from SCRATCH!

Have you ever had such a good friend she would come over when you’re husband is out of town and cook dinner for you and your kids? Well, I do! I have a bestie like that and she’s a life saver. Not only does she come over to make dinner but she teaches my kids to cook too! Because let’s face it, I’m not going to do it. What’s on the menu? Pasta Carbonara and arugula salad with pasta made from scratch. Feeling lots of gratitude :) Here’s the recipe if you want to try it at home: For the pasta: 2 cups of flour 1.5 cups milk 2 tablespoons of butter - softened 2 eggs 1 tablespoon of salt Add flour to bowl and make a well in the center and gently add all the ingredients to the well. With your hands, start mixing until you can dump on floured counter. Kneed dough a few times then roll it out. Cut pasta however you want with a pizza cutter. Then drop into boiling water until they float to the top. Fresh pasta only takes a few minutes. For the carbonara: 4 eggs 1.5 cups of fresh grated Parmesan In a bowl mix 3 egg yolks and 1 egg. Add all the cheese and mix well. Add the pasta into the bowl (save cooking liquid). Start stirring and add a tablespoon or so of the cooking fat and keep stirring. To make it creamier add a tablespoon or so of cooking water. Salt and pepper to taste. It’s important to taste everything so you can get the right flavor.
